Francesinha à la Sun with Style
Sun with Style's original recipes I
As promised in the first post of Gastronomy in Figueira we are posting here Francesinha à la Sun with Style! Prepared with carefully selected ingredients, we recreated the most beloved Portuguese snack for refined tastes and people who are passionate about gastronomy. The recipe presented here serves two people.
Fracesinha à la Sun with Style
- 150 gr. Bacon
- 1 onion
- 75 gr. leek
- 2 garlic cloves
- 1 table spoon olive oil
- 1 beef broth cube
- 2 table spoon tomato sauce
- 1 teaspoon mustard
- 100 ml Port wine
- 50 ml Whiskey
- 1 table spoon worcestershire sauce
- 50 ml white wine
- Salt to taste
- 1 tablespoon butter
- 6 slices of bread
- 4 x 75 gr. Filé Mignon
- 4 fresh sausage
- 2 slices of ham
- 200 gr. emmental cheese
Start making the sauce by cutting the bacon into strips and sautéing it in oil with the diced onion, garlic and leeks.
In a separate bowl, add Port wine, whiskey, white wine, tomato sauce and mustard mixing well. When homogeneous, add to the stew, add the beef broth and let it reduce.
When the sauce is already reduced, with the alcohol evaporated, add the Worcestershire sauce and the butter.
Pass through a sieve and rectify the salt if necessary.
In a stove pan, add 5 tablespoons of water and the sausages. Only then heat the pan. When the water has dried, cut the sausages in half lengthwise and return them to the skillet to brown. Add a drizzle of olive oil to tan them evenly.
Season the steaks with salt and garlic and fry them to your preference. We suggest that they are only seared so that they get to medium when the sandwiches go to the oven.
Grease a glass dish with olive oil and place the first slice of bread. Place the ham and sausages and cover them with a slice of cheese. Place the second slice of bread and the first steak on it. Then add another slice of cheese and the second steak. To finish, place the last slice of bread and cover with the remaining cheese
Bake at 175 ° C for 15 minutes, or until the cheese has completely melted. Place the sandwich on a deep plate and drizzle with the sauce.
Suggestion: Serve with french fries.
